Our breakout sessions are designed to give you hands-on, real-world skills you can immediately apply to your baking and business.
From foundational techniques to specialized skills, each session is led by experienced bakers and professionals who are actively working in the industry.
Breakout Session Schedule
Breakout sessions will run throughout the morning in designated time blocks.
Attendees have already selected their sessions in advance. Please review your personal schedule and plan accordingly, as some sessions may overlap with bakery tours.
Class Offerings & Instructors
Royal Icing Basics- 9-9:30am
Instructor: Logan – One Smart Cookie (SDBA President)
Learn the foundations of working with royal icing, including consistency, control, and basic decorating techniques. This class is perfect for beginners or anyone looking to build confidence with sugar cookies and detailed designs.
Cake Pop Basics - 9:30-10am

Learn the fundamentals of making cake pops, including forming, dipping, and decorating. This session is perfect for adding a profitable, beginner-friendly product to your offerings.
Buttercream Basics- 9-10am

This session focuses on essential buttercream techniques, including smooth finishes, piping basics, and creating clean, professional-looking cakes. A great class for refining your core decorating skills.
Baking Up Kolaches- 10:30-11am

Sourdough Roundtable- 11-11:30am

An open-style discussion focused on sourdough baking, troubleshooting, and technique. Whether you're new to sourdough or experienced, this session allows for shared learning, questions, and real conversation.

Sioux Falls Food Tours (Bakery Tour Experience)- (9-10:30am & 10:30-12pm)
Hosted by: Sioux Falls Food Tours
Step outside the convention center and experience the local baking scene firsthand.
This guided bakery tour will take attendees to three different downtown Sioux Falls bakeries, offering a behind-the-scenes look at local operations, products, and environments. It’s a unique opportunity to explore how other bakeries function, gain inspiration, and connect with the broader baking community.
